In this episode: Cantonese cuisine, with salted duck egg

On this meal we will learn more about some special dishes from the Cantonese cuisine. The name of the restaurant already reveals that the chef does not only prepare Chinese dishes: flavors from Malaysia can also be found on the menu. The décor of this small restaurant tries to create an atmosphere of a cozy street food eatery at the night market in Southeast Asia.

Your host Oey Toen Ping will pay extra attention to the salted duck egg ingredient this time. Uncooked duck eggs are placed in a saturated salt bath for 3-4 weeks. Because the eggshells are porous, the salt penetrates the eggs (slowly). This gives the egg a salty taste. Due to differences in the eggshells, the salt intake of each egg is different. So one does not know how salty each egg has become. Salting eggs is a traditional way of preserving eggs.
