A recent discovery by your host OEY Then Ping is the restaurant ‘Northeast Kitchen’ in Amsterdam. As the name indicates, they serve dishes from the northeast of China, a large and not well defined area. With the dishes of the ‘Lu-cuisine’ (Shandong province) as a basis, supplemented with influences from Beijing and the northern provinces (Heilongjiang, Jilin and Liaoning). In addition, there are also influences from Russian, Mongolian and Korean cuisines.
The flavors are somewhat stronger than those of southern Chinese cuisines, but the variety of flavors and smells is rich and varied. We are going to enjoy new flavors of the dishes such as ‘Chicken with wild mushrooms’, ‘Guobarou (slices of pork fried in a layer of flour)’, eggplant, sweet potatoes, and ‘stewed fish with doufu and pancake’. With these and other dishes we will start our introduction to the cuisine of the Northeast of China.
